Ephemeral

This week’s photo challenge is ephemeral or lasting for a very short time.

Edible Christmas gifts

What a fun day!  As a family we went to Ashburton Cookery School for the Edible Christmas gift course with Chef Joe.  We had such and amazing time learning to make some homemade edible gifts as well as spending the time together as a family in the kitchen – just what you want for Christmas!

Modern Vegetarian Plus

What a fun weekend learning more about vegetarian dishes at Ashburton Cookery School.

We’ve made all the following dishes:

  • Poached duck egg salad with puy lentils, baby gem, beetroot, balsamic dressing and crunchy croutons.
  • Cream of celeriac, cumin & goat’s cheese soup.
  • Sweet potato, chickpea and aubergine tagine with pomegranate and herb cous cous.
  • Spiced seasonal fruits with basil ice cream.
  • Honey roasted parsnip & black pepper bread.
  • Parsnip and goat’s cheese souffle with a tomato, green bean and caper salad.
  • Butternut squash, pine nut and sage ravioli served with fresh pesto.
  • Courgette, feta, sun blushed tomato and thyme tart.
  • Apple tart tatin with toffee sauce.

Patisserie Week

For our holiday this year, we went to Ashburton and did the patisserie course.  What a fantastic week!

We’ve been for a few day and weekend courses, but this week course has been the best so far! (I am on a diet now to get rid of the few extra pounds though!)

Buckwheat Muffins

Apple banana nut muffins

My new favorite healthy muffins.
Banana, apple & nut – Buckwheat Muffins

INGREDIENTS

1/4 cup buckwheat flour
1 tsp baking powder
2 tsp ground cinnamon
1/8 tsp coarse salt
2 large eggs
1 mashed banana
1tbs honey
1 finely diced (peeled and cored) sweet apple
1/4 cup chopped walnuts or pecan nuts
DIRECTIONS

Heat oven to 180C. Place four baking cups in a muffin tin (I use my heart muffin tin that makes 8 medium muffins).

In a bowl, whisk together flour, baking powder, cinnamon, and salt.
In another bowl, whisk together eggs, banana, and honey.
Mix the wet ingredients into the dry, then fold in apple and walnuts.

Bake 30 minutes, or until a tester comes out clean.
Let cool on a wire rack.

Easter goodies

We’ve had so much fun this weekend.  My hubby made wonderful hot cross buns and easter eggs.

 

 

 

 

Pastry and Puddings Plus

Day 1

So yesterday my hubby says… lets go and do the pastry and puddings course and here we are!  We spent the whole day baking at the Ashburton cookery school.  We had a wonderful day baking and I am really looking forward to tomorrow to continue the adventure!

I love my wonderful husband’s last minute ideas.  What an amazing weekend!  We had such fun.  Today was the last day of our Pastry & Puddings course and my son loves all the goodies be brought back!

Baking mince pies

I quite enjoy baking, but I must admit pies and pastries are not normally something I would make.
A few years back, after living in America for 2 years I really started missing ‘Mince pies’  so I tried making in myself.
